Halloumi with lentil salad


Halloumi is a Cypriot cheese, but it also popular in Greece and the Middle East. I usually like to eat it grilled with bread and tomatoes. It doesn't melt but it browns beautifully. Today, I wanted to do a balanced nutritious meal and I didn't want it boring, so I tried this lentil salad. It made a great meal and the best part was the grilled halloumi cheese of course.

Ingredients (serves 4): 9 oz (250g) cherry tomatoes, halved - ½ red onion sliced - one garlic clove crushed - ½ lemon juiced - 1 tbsp olive oil - 5 oz (150g) Puy lentils - 9 oz (250g) grilled halloumi

Cook the Puy lentils in hot boiling water until just tender. Drain. Season well and toss.
In a bowl, toss the lentils with the cherry tomatoes, the onion and the garlic. Drizzle the olive oil and the lemon juice. Season with salt and pepper. Add the grilled halloumi slices. Serve.

Salade de lentilles au halloumi
Ingrédients (4 personnes): 250 g de tomates cerises coupées en 2 - ½ oignon rouge émincé - une gousse d'ail écrasée - ½ citron pressé - 1 càs d'huile d'olive - 150 de lentilles de Puy - 250 g de halloumi grillé

Faites cuire les lentilles dans de l'eau bouillante salée. Égouttez.
Dans un saladier, mélangez les lentilles avec les tomates cerises, l'oignon et l'ail. Ajoutez l'huile d'olive et le jus de citron. Salez, poivrez. Ajoutez les tranches de halloumi grillé. Servez.
