Risotto with spinach and goat cheese


I love Jamie Oliver's cookbooks. I have to say when I saw the recipe "Risotto with spinach and goat cheese" in his book Cook with Jamie, I was excited about it. So flavored, perfumed from the wine, a bit cheesy and nicely creamy.

Seves 6 to 8:
Ingredients for the basic risotto:
1 ¾ pint chicken or vegetable stock - 2 tbsp olive oil - 1 tbsp butter - 1 large onion, peeled and finely chopped - 6 sticks of celery, trimmed and finely chopped - 1lb 6oz (600g) risotto rice - 1 cup dry white wine

If you make the risotto in advance, oil a large tray and set aside.

Bring the stock to a simmer in a saucepan.
Put olive oil and butter in an other large pan, add onion and celery and cook very gently for about 10 minutes, without coloring, until soft.
Add the rice and turn up the heat - keep stirring continuously.

Pour in the wine and keep stirring all the time until all the alcohol has evaporated.
Add the stock to the rice a ladle at a time, stirring and waiting until it has been fully absorbed before adding the next. Turn the heat down a bit to prevent cooking the rice too quickly, and continue to add ladles of stock until it has all been absorbed. This takes about 15 minutes. The rice now begins a bit to soften, but is still quite hard.

Scoop the part-cooked rice out on the waited oiled tray, spread it out evenly and not to thick and put the tray somewhere to cool down.
When it’s completely cooled, scrape it carefully all in a container with a lid and keep it in the fridge until you want to use it. You can keep this rice 1 to 2 days in the fridge.

Now you’ll have a perfect risotto base. Finish it off with the following recipe:

Ingredients for the spinach risotto with goat’s cheese: 1/3 cup butter - olive oil - 1 clove of garlic, peeled and chopped - nutmeg, for grating - 9 oz (150g) spinach, washed and dried - salt and freshly ground pepper - 1 ¼ pint vegetable or chicken stock - 1 to 2 hands freshly grated Parmesan Cheese - ½ lemon - 7 oz (200g) soft goat’s cheese, crumbled

Heat a medium saucepan, spoon in a tablespoon of the butter and add a splash of olive oil, the garlic and a good grating of nutmeg.
When the butter has melted, add the spinach. Cook for 5 minutes, moving it until it’s wilted down. A lot of the liquid will cooked away and a dark intensely flavored spinach will be over.

Chop finely and season with salt and pepper to taste. Heat up your stock in a medium saucepan and bring to a simmer.


Put a different large saucepan on medium high heat and pour in half the stock followed by all your risotto base. Stirring all the time, gently bring to a boil, and cook until most of the stock has been absorbed. Add the rest of the stock a ladle at the time until the rice is cooked.
Turn off the heat, and stir in your spinach, butter and parmesan. Add a good squeeze of lemon juice, season with salt and pepper and leave the risotto to rest (with the lid on) for a minute. Fold in half of the goat’s cheese, stir well and scoop your portions on the plates. Finish off with the rest of the goat’s cheese, some lemon zest, a little drizzle of extra virgin olive oil and a bit of grated Parmesan.



Risotto aux épinards et au fromage de chèvre
Pour 6 à 8 personnes:
Ingrédients pour le risotto de base: 1 litre de bouillon de volaille ou de légumes - 2 càs d'huile d'olive - 1 càs de beurre - 1 oignon, finement haché - 6 branches de céleri, finement hachées - 600 de riz arborio - 250 ml de vin blanc sec

Si vous faites le risotto à l'avance, huilez une plaque à four et réservez.

Faites frémir le bouillon dans une casserole.
Faites chauffer le beurre et l'huile d'olive dans une grande casserole et ajoutez l'oignon et le céleri, et laissez cuire doucement environ 10 mn sans laisser colorer.
Ajoutez le riz puis passez à feu vif - mélangez sans arrêt.

Versez le vin blanc sec en remuant sans arrêt jusqu'à évaporation totale.
Versez le bouillon, une louche à la fois, en remuant et en attendant l'absorption complète du liquide avant d'en rajouter. Baissez le feu un peu pour que le riz cuise lentement, et continuez à ajoutez le bouillon, louche après louche, jusqu'à épuisement. Cette opération prend environ 15 mn . A ce stade, le riz commence à être cuit tout en restant al dente.

Versez le riz sur la plaque huilée. Étalez-en une couche régulière pas trop épaisse, et laissez refroidir complètement. Une fois refroidi, décollez-le avec une spatule et placez-le dans un récipient hermétique au réfrigérateur jusqu'àu moment de la finition de la recette.
Vous pouvez conserver ce riz un à 2 jours.

Voici la recette de base. On va la poursuivre avec la recette suivante:

Ingrédients pour le risotto aux épinards et au chèvre: 125 g de beurre - huile d'olive - 1 gousse d'ail, pelée et hachée - noix de muscade à râper - 150 g d'épinards lavés et essorés - sel et poivre noir fraîchement moulu - 70 cl de bouillon de légumes ou de volaille - 1 à 2 poignées de parmesan râpé - ½ citron - 200 g de fromage de chèvre émiétté

Faites chauffer une casserole à feu moyen, ajoutez une càs de beurre et une lampée d'huile d'olive. Ajoutez l'ail et une pincée de muscade râpée. Quand le beurre est bien fondu, ajoutez les épinards et laissez cuire pendant 5 mn en remuant. En cuisant, les épinards vont se ramollir, prendre un parfum délicieux et rendre un jus assez foncé et parfumé.

Hachez-les finement dans un mixer avec leur jus et assaisonnez-les de sel et de poivre.

Faites chauffer le bouillon.
Faites chauffer une grande casserole à feu moyen, versez la moitié du bouillo et tout le riz précuit. Sans cesser de mélanger, portez lentement à ébullition et laissez mijoter jusqu'à ce que tout le liquide soit absorbé. Versez alors le reste du bouillon, louche après louche, jusqu'à cuisson complète du riz.

Sortez du feu. Incorporez les épinards, le reste du beurre et le parmesan râpé. Ajoutez aussi un bon trait de jus de citron, vérifiez l'assaisonnement, salez et poivrez. Couvrez ensuite la casserole, laissez le risotto reposer pendant 1 minute puis ajoutez la moitié du fromage de chèvre en mélangeant. Saupoudrez avec quelques zestes de citron hachés et le reste de fromage de chèvre. Arrosez d'un bon trait d'huile d'olive extra-vierge.
