Kebbeh - kebbeh bel sayniyyeh


Kebbeh is Lebanon's staple, sort of what hamburgers are for the Americans. This dish is made of burghul (cracked wheat) and minced meat, beef or lamb. Kebbeh can be baked as a pie (kebbeh bel sayniyyeh) as shown here, or it can be shaped into balls (Kebbeh 'ras) or patties, as shown here. It can be served with plain yoghurt and cucumber sauce, or with a fresh salad.

Burghul dough: 
14 oz (400g) fine burgul (cracked wheat) 
2 cups warm water 
3/4 lb (350g) minced lamb 
1 tsp salt 
1 onion, chopped

Filling: 
8 oz (220g) minced lamb 
2 finely chopped onions 
2 tsp salt 
1 tsp black pepper 
 ½ tsp cinnamon 
 ½ cup pine nuts

Soak the burgul in a bowl with warm water for about ½ an hour. Blend the burgel with minced meat, salt, spices, and the chopped onions. Blend everything together until very smooth and refrigerate while cooking the meat for the stuffing.

Fry the chopped onions with salt and black pepper until golden. Add the minced meat and cook for about 15 minutes or until the meat is cooked. Add the pine nuts, the spices, and let simmer for about 8 minutes.
Lay down half the kebbe dough on a round tray, then lay down the minced meat. Place the other half of the kebbe dough on the top of the minced meat, the cut it in diamond shape. Drizzle some oil and bake it 30 to 40 mn, in a preheated oven at 350ºF (180ºC), or until top is golden brown.


Plateau de kebbé - Kebbeh bel sayniyeh

Pâte: 
400 g bourghoul 
2 tasses d'eau chaude 
350 g de viande hachée 
1 càc sel 
1 oignon émincé

Farce: 
220 g de viande hachée 
2 oignons finement émincés 
2 càc sel 
1 càc poivre noir 
½ càc cannelle 
½ tasse pignons de pin

Faites tremper le bourghoul dans l'eau chaude environ une demie heure. Dans un robot, mixer le bourghoul, la viande, le sel, les épices et l'oignon émincé jusqu'à obtenir une pâte homogène. Réserver au froid.

Dans une poêle, faites revenir les oignons avec le sel et le poivre jusqu'à ce qu'il soient transparents. Ajoutez la viande hachée et laissez cuire environ 15 mn ou jsuqu'à ce que la viande soit cuite. Ajoutez les pignons de pin, les épices et laissez mijoter environ 8 mn. Étalez la moitié de la pâte dans un plat rond allant au four, lissez la surface en trempant la paume de la main dans l'eau, étalez par dessus la farce, puis recouvrez avec l'autre moitié de la pâte. Coupez le kebbé en croisillons. Arrosez d'huile et faites cuire au four préchauffé à 180ºC pendant environ 30 à 40 mn ou jusqu'à ce que la surface soit dorée.

I can already see them going perfectly with those ingredients but to be honest, I never taste this, and I'm gonna made it in a low portion because I don't want to waste food because I ain't a expert in this kind of things but this bog is a good one, so I will do my best try to solve my lack. 23jj

Peut etre un peu oubliees de nos jours... Bon retour au pays et petillantes continuations goulues ...
