Fattoush salad - Lebanese salad

I know that many of you had the chance to eat Lebanese food, but i don't know if you ever had the chance to eat Fattoush. Fattoush is a Levantine salad made from toasted pieces of bread and combined with lots of fresh vegetables. The sumac, and the lemon-minty dressing bump this salad up to add texture and flavor. At home, I love to cook Lebanese, maybe because I grew up eating Lebanese food, or maybe because living abroad makes me miss the real Lebanese taste!  

Ingredients (serves 6 to 8): 1 Roman lettuce coarsely chopped - 1 cup coarsely chopped purslane - 1 bunch of parsley chopped - ½ bunch of mint leaves chopped - 2 small cucumbers peeled and diced - 7 to 8 radishes sliced - 2 tomatoes coarsely diced - 1 onion sliced - 2 green onions thinly sliced- 2 cloves of garlic crushed - 1/4 cup of pomegranate molasses (debs el remmen) - ½ cup lemon juice - 2/3 cup olive oil - ½ teaspoon paprika - 1 to 2 tbsp sumac - salt - 2 pita bread cut into strips then toasted and crumbled

Arrange all the vegetables in a big salad bowl.
In a small bowl, mix the pomegranate molasses, the lemon juice, the olive oil, the sumac, the paprika, the salt and the crushed garlic.
Sprinkle the sauce on the vegetables. Toss well.
Add the crumbled pita chops and serve.

Salade fattouch - salade libanaise
Ingrédients (6 à 8 personnes): 1 laitue émincée - 1 botte de mâche - 1 bouquet de persil ciselé - ½ bouquet de menthe ciselée - 2 petits concombres épluchées et coupées en rondelles - 7 à 8 radis coupés en rondelles - 2 tomates coupées en gros cubes - 1 oignon coupé en lamelles - 2 oignons verts émincés - 2 gousses d'ail écrasées - 1/4 tasse de mélasse de grenade (debs el remmen) - ½ tasse de jus de citron - 2/3 tasse d'huile d'olive - ½ càc de paprika - 1 à 2 càs de sumac - sel - 2 pains pita coupés en carrés grillés

Disposer tous les légumes dans un grand saladier.
Dans un bol, mélanger la mélasse de grenade, le jus de citron, l'huile d'olive, le sumac, le paprika, le sel et l'ail écrasé.
Verser la sauce sur les légumes. Mélanger bien.
Ajouter les morceaux de pain pita grillés et servir.

  1. mine's not so authentic! This looks lovely, and I happen to have a bottle of pomegranate molasses in my pantry. I'll have to make the traditional version and see how it tastes! Thanks for your help!
