Frittata with potato and prosciutto


Frittata, the famous Italian omelet, a great way to start any day. You can have it for breakfast or for a simple lunch. You can throw anything you like in a frittata and it's a great way also to use up leftover vegetables. It's great, hot or cold.

 
Ingredients: 4 tbsp olive oil - ½ onion chopped - 15 oz (425g) potatoes peeled cut into ¼ inch cubes - 2 cloves garlic minced - salt - pepper - 6 large eggs - ¼ cup heavy cream - ¼ cup grated parmesan - 2 oz (60g) sliced prosciutto coarsely chopped - 2 tbsp chopped fresh basil leaves

Heat the oil in a skillet over medium heat, and add the onion, saute until transparent.
Add the potato cubes, the garlic and season with salt and pepper. Saute over medium-low heat until the potato is golden and crisp on the outside, tender inside, about 20 minutes.
Whisk the eggs, cream, Parmesan, prosciutto, and basil in a medium bowl to blend. Stir the egg mixture into the potato mixture in the skillet. Cook over medium-low heat until the egg mixture is almost set but the top is still loose. Preheat the broiler and place the skillet under the broiler. Broil until the top is set and golden brown, about 5 minutes. Using a rubber spatula, loosen the frittata from skillet and slide the frittata onto a plate. Serve.

Frittata aux pommes de terre et au proscuitto
Ingrédients: 4 càs d'huile d'olive - ½ oignon haché - 425 g de pommes de terre, pelées et coupées en petits cubes - 2 gousses d'ail hachées - sel - poivre - 6 gros œufs - 60 ml de crème à fouetter - 60 ml de parmesan râpé - 60 g de proscuitto grossierement haché - 2 càs de basilic haché

Faire chauffer l'huile dans une poêle et faire revenir les oignons à feu moyen jusqu'a ce qu'ils deviennent transparents.
Incorporer les cubes de pommes de terre, l'ail, le sel et le poivre, a feu doux faire sauter le tout 20 mn, ou jusqu'a ce que les cubes de pomme de terres soient tendres et dorés.
Dans un saladier, fouetter les œufs, la crème, le parmesan, le proscuitto et le basilic.
Incorporer les mélange d'œufs à celui des pommes de terre dans la poêle, couvrir et laisser cuire quelques minutes à feu moyennement doux jusqu'a ce que la preparation soit presque prise mais que le dessus soit un peu baveux. Préchauffer le grill et placer la poêle sous le grill et poursuivre la cuisson 5 mn ou jusqu'a ce que le dessus soit doré.
A l'aide d'une spatule, dégager le portour de la frittata pour ensuite la faire glisser dans une assiette. Servir.
