Chocolate Fondant


I wanted a chocolate desert for Saturday's dinner. Our friends are fond of chocolate, anyway who isn't?? So to please them I searched for a nice chocolate fondant recipe on a french blog Ma p'tite cuisine. That was it, it was more than tasty, it was heavenly. There was a total silence in the dining room as everyone was savoring each bite of this chocolate desert.

Ingredients fondant: 9 oz (250g) dark chocolate - ½ cup butter - 2 cups powdered sugar - a pinch of salt - 1/3 cup cornstarch - 6 eggs

Ingredients topping: 1 3/4 oz (50g) dark chocolate - 1/4 heavy cream - 1 3/4 oz (50g) flaked almonds

Preheat the oven at 410ºF (210ºC).
Place a bowl over a pan of barely simmering water, then slowly melt the chocolate and butter together.
Transfer to a bowl. Add the sugar and mix.
Add a pinch of salt and 1/3 cup cornstarch.
Whisk well and incorporate the eggs, one at a time whisking well after each addition.
Pour the mixture in a greased and floured cake pan.
Bake for about 20 mn, then turn the oven off and keep the cake inside to set for about 5 mn. The cake should be a lightly shaking in the middle. Take out of the oven, leave to cool a little bit and then unmould.
For the ganache, bring the cream to a boil in a saucepan. Pour in the chopped chocolate and allow to stand for 5 minutes. Stir with a whisk until smooth. Spread the ganache on the cake and sprinkle the grilled flaked almonds.

Fondant au chocolat
Ingrédients fondant: 250 g de chocolat noir - 120 g de beurre - 200 g de sucre en poudre - une pincée de sel - 60 g de maïzena - 6 œufs

Ingrédients ganache: 50 g de chocolat noir - 5 cl de creme liquide - 50 g d'amandes effilées

Préchauffez le four à 210ºC.
Faites fondre le beurre et le chocolat au bain-marie.
Transférez le mélange chocolat beurre dans un saladier. Ajoutez 200g de sucre et mélangez. Ajoutez une pincée de sel et 60 g de maïzena.
Mélangez au fouet, et ajoutez un a un les œufs, remuez bien apres chaque ajout.
Versez la préparation dans un moule beurré et fariné.
Enfournez pendant 20 mn, puis éteignez le four et laissez le fondant 5 mn au four. Le gâteau doit légerement être tremblotant au milieu. Sortez le du four et laissez le refroidir avant de le démouler.
Pour recouvrir le fondant de ganache, faites bouillir la creme, y faites fondre le chocolat coupé en morceaux. Étaler ensuite sur le fondant et répartir dessus les amandes effilées préalablement passées quelques minutes a la poêle.
