Shrimp linguine


Shrimp linguine, just the name of the recipe make the dish sound good to me. Elegant, but simple, fast and very impressive. I actually enjoy shrimp with pasta a lot. It's a simple dish that takes only as long to cook as the pasta does.

Ingredients (serves 4): 1 lb (500g) linguine - 2 lb (1 kg) shrimps peeled and deveined - 1 tbsp olive oil - 1 onion diced - 3 minced garlic - 1 cup cream - 1 tbsp tomato paste - 3 tbsps white wine - a pinch of chopped fresh parsley leaves

Cook the pasta in a large pot of salted boiling water.
In another large pan, add the olive oil and saute the onion and the garlic over medium low heat. Add the shrimps, salt and pepper and saute until the shrimp have just turned pink, stirring often. Add the white wine, and bring to a boil. Reduce the heat to low, add the cream while stirring. Add the tomato paste and cook over low heat without boiling. Sprinkle some parsley, and toss over the linguine.

Linguine aux crevettes
Ingrédients (4 personnes): 500g de linguine - 1 kilo de crevettes fraiches ou congelées décortiquées - 1 càs d'huile d'olive - 1 oignon émincé - 3 gousses d'ail écrasées - 250 ml de creme liquide - 1 càs de concentré de tomates - 3 càs de vin blanc - un peu de persil haché

Cuire les pâtes à l'eau bouillante salée.
Chauffer l'huile dans une grande poêle et faire sauter l'oignon et l'ail quelques minutes, ajouter les crevettes, saler, poivrer et laisser cuire jusqu'à ce qu'elles changent de couleur.
Ajouter le vin blanc et porter à ébullition.
Réduire le feu et incorporer graduellement la crème à l'aide d'un fouet.
Ajouter le concentré de tomates. Réchauffer doucement sans laisser bouillir.
Incorporer le persil et servir sur le lit de linguine.
