Chicken with olives


I wanted a good quick meal for tonight. I had chicken breasts in my fridge, some cherry tomatoes and of course a lot of olives. In Lebanon, we love olives, we eat them for breakfast, lunch and dinner. The North of Lebanon is known to be the olive country, you can see hundreds and hundreds of olive trees. Sometimes, if I have the chance, I tuck a couple of olives jars in my suitcase, but what I miss the most is the stuffs I can't bring back home, like a good bottle of olive oil picked by my father in law every year during the harvest season.

Ingredients (serves 4): 1 1/2 oz (45g) olives, pitted and halved - 4 chicken breasts - 4 garlic cloves peeled and halved - 3 tbsp chopped parsley - 1/2 pound cherry tomatoes - 2 tbsp olive oil - salt - pepper

Preheat the oven at 400ºF (200ºC). Soak the olives in water for 5 mn. Drain.
Season the chicken breasts with salt and pepper. Place them in a baking dish and slide half a garlic clove under each piece. Mix the olives, tomatoes, parsley and olive oil and sprinkle over the chicken. Bake for about 1 hour until chicken is cooked.

Poulet aux olives
Ingrédients (4 personnes): 45 g d'olives dénoyautées et coupées en 2 - 4 filets de poulet - 4 gousses d'ail pelées et coupées en 2 - 3 càs de persil plat ciselé - 250 g de tomates cerises - 2 càs d'huile d'olive - sel - poivre

Préchauffez le four à 200ºC. Faites tremper les olives 5 mn dans de l'eau pour les dessaler. Égouttez. Salez et poivrez les filets de poulet puis disposez-les dans un plat allant au four, et glissez une demie gousse d'ail sous chaque filet. Mélangez les olives, le persil, les tomates et l'huile d'olive et saupoudrez les filets. Faites cuire environ 1 h jusqu'à ce que le poulet soit cuit.

  1. Hi, is there any way to cook this in a pan? I'd be a single serving so having the oven on for a full hour just for this would be too much.

    Yes you can cook it in a pan if you don't want to use the oven.
