Balila - Cumin Chickpea salad

Balila, also known as cumin chickpeas, is the perfect Lebanese dish. In fact, chickpeas hold a very important place in the Lebanese cuisine. I love chickpeas, I always cook up a large pot and toss them in the freezer, so whenever I am craving for hummus or chickpea salad, i can have them handy. You can use canned chickpeas, but cooked ones are better tasting, cheaper, with a much better texture.

Ingredients (serves 4): 
2 cups chickpeas 
1 tsp salt 
4 garlic cloves crushed 
2 tbsp cumin 
1 1/2 oz (40g) pine nuts roasted 
2 tbsp chopped parsley 
3/4 cup olive oil

Soak the chickpeas in water for 12 hrs. Rinse and drain. Cook them on medium heat until tender. Drain them and place them in a salad bowl. Add the crushed garlic gloves, the salt, the cumin, and the olive oil. Toss them until combined. Sprinkle with chopped parsley and roasted pine nuts. 

Balila - salade de pois chiches au cumin

Ingrédients (4 personnes): 
2 tasses de pois chiches 
1 càc de sel 
4 gousses d'ail écrasées 
2 càs de cumin 
40 g de pignons de pin grillés 
2 càs de persil ciselé 
200 ml d'huile d'olive

Trempez les pois chiches dans de l'eau pendant 12 heures. Lavez et égouttez-les. Faites les cuire à feu moyen dans une cocotte minute jusquà ce qu'ils soient tendres. Égouttez.
Disposez les dans un saladier, ajoutez les gousses d'ail écrasées, le sel, le cumin et l'huile d'olive. Saupoudrez de persil et de pignons de pin grillés.

  5. I love chickpeas salad with a lot of garlic, than you have to hide and don't speak to anybody. LOL Your recipe is so simple and looks so good. I never thought of pine nuts but it sounds perfect.
